Chicken Liver Pâté With Coriander Recipes

Ingredients : |
450 g
chicken livers, trimmed
225 g
butter
4
shallots, finely chopped
2 cloves
garlic, chopped
2.5 ml
ground coriander
10 ml
chopped parsley
salt and
pepper
10 ml
mango chutney
Garnish
:
coriander
leaves
clarified
butter |
Method :
- If livers are large, cut in even
sized pieces.
- Melt half the butter in a sauté
pan.
- Add the shallots, garlic,
coriander and livers and cook together over moderate heat until
livers are cooked through.
- Allow to cool completely and purée
in a food processor or blender.
- Push through a metal sieve if a
smoother pâté is desired.
- Add remaining butter, parsley,
salt and pepper and chutney.
- Process again until smooth, and
transfer to a serving dish.
- Coat with clarified butter
prepared as for Country Herb Pâté.
- Decorate with coriander leaves.
- Serve with toast.
