Chicken Liver Pâté With Coriander Recipes

Ingredients :

450 g chicken livers, trimmed

225 g butter

4 shallots, finely chopped

2 cloves garlic, chopped

2.5 ml ground coriander

10 ml chopped parsley

salt and pepper

10 ml mango chutney

Garnish :

coriander leaves

clarified butter

Method :
  1. If livers are large, cut in even sized pieces.
  2. Melt half the butter in a sauté pan.
  3. Add the shallots, garlic, coriander and livers and cook together over moderate heat until livers are cooked through.
  4. Allow to cool completely and purée in a food processor or blender.
  5. Push through a metal sieve if a smoother pâté is desired.
  6. Add remaining butter, parsley, salt and pepper and chutney.
  7. Process again until smooth, and transfer to a serving dish.
  8. Coat with clarified butter prepared as for Country Herb Pâté.
  9. Decorate with coriander leaves.
  10. Serve with toast.
