Chicken and Pickled Ginger Stems in Honey Sauce Recipes

Ingredients : |
1 young chicken (gutted)
4 tbsp honey
150g pickled ginger stems
4 shallots
1 chili
Chinese parsley
1 tbsp Shaoxing wine
Marinade
1 tbsp ginger juice
1 tbsp Shaoxing wine
1 tbsp light soy sauce |
Method :

Wash
chicken. Wipe dry and cut into pieces. Add marinade and mix well.
Marinate for 1/2 hour. Then add 1 tbsp caltrop starch and mix well.
Deep fry chicken in boiling oil. Then remove chicken and drain.

Cut
pickled ginger stems into large pieces. Cut chili into rings. Wash
Chinese parsley.

Heat 3
tbsp of oil. Add shallots, pickled ginger stems and chicken. Stir
fry for a while. Add in small amount of honey each time. Broil for
stir fry over low heat until the sauce dries up and chicken is
cooked. Add 1 tbsp Shaoxing wine and chili. Then cook for a while.
Put pickled ginger stems on a plate. Place chicken on top of pickled
ginger stems and decorate with Chinese parsley.
