Hazelnut Chicken Recipes

Ingredients :

For the marinade :

Large chicken

 

natural yoghurt

ground cardamom

ground cumin

pepper

 

soft bread crumbs

hazelnuts, chopped

ground cardamom

ground cumin

pepper

oil

onion, chopped

garlic cloves, chopped

egg

Method :
  1. Wash and dry the chicken.
  2. Mix the marinade ingredients.
  3. Combine the bread crumbs, nuts and spices in a bowl.
  4. Heat the oil in a pan and add the onion.
  5. Cook until the onion is tender, then add the garlic and cook for a further minute.
  6. Strain and put the onion and garlic into the bowl.
  7. Add the egg and mix the stuffing.
  8. Pack it into the chicken and sew up cavity.
  9. Place the chicken in a gratin dish.
  10. Using your fingers, open up the area between the skin and the flesh.
  11. Coat the flesh with three quarters of the marinade.
  12. Coat the outside with the leftover marinade and leave to stand for 1 hour, covered.
  13. Place in a preheated oven 190C/375F/Gas 5 for an hour or until cooked.
  14. Baste every 15 minutes with the marinade.
