Hazelnut Chicken Recipes

For the marinade :

Method :
- Wash and dry the chicken.
- Mix the marinade ingredients.
- Combine the bread crumbs, nuts and spices in a bowl.
- Heat the oil in a pan and add the onion.
- Cook until the onion is tender, then add the garlic and cook for
a further minute.
- Strain and put the onion and garlic into the bowl.
- Add the egg and mix the stuffing.
- Pack it into the chicken and sew up cavity.
- Place the chicken in a gratin dish.
- Using your fingers, open up the area between the skin and the
flesh.
- Coat the flesh with three quarters of the marinade.
- Coat the outside with the leftover marinade and leave to stand
for 1 hour, covered.
- Place in a preheated oven 190C/375F/Gas 5 for an hour or until
cooked.
- Baste every 15 minutes with the marinade.
Serve 4
