Saffron Chicken Recipes

ground saffron or 1/2 tsp saffron threads

butter

oil

onions, chopped

garlic cloves, crushed

natural yoghurt

tomatoes, chopped

corianders leaves, chopped

salt

pepper

Method :
  1. Cut the chicken into 10 pieces and remove the fat and skin.
  2. Dissolve saffron in 75 ml hot water.
  3. Heat the butter and oil and fry the onions until they are translucent.
  4. Remove onions and then brown the chicken pieces, adding more if necessary.
  5. Remove the chicken, and put in the garlic, yoghurt, tomatoes, half the coriander, salt and pepper.
  6. Stir for 5 minutes, then replace the chicken pieces.
  7. Add the saffron and stir well so the chicken is coated with the mixture.
  8. Cover and simmer for 50-60 minutes.
  9. Serve with the rest of the coriander sprinkled over the dish.
