Fish with Cardamom Recipes

Method :
- Wash and dry the fish.
- Sprinkle with turmeric and rub into the flesh.
- Slice 3 of the onions finely.
- Put the fourth one, peeled and roughly chopped, into the food
processor.
- Add the garlic, yoghurt, pepper and chilies.
- Blend to a smooth paste and reserve.
- Put the oil in a pan and, when hot, add in the onion slices,
cardamom and cinnamon.
- Cook until the onions are golden brown.
- Turn the heat down low and pour in the mixture from the food
processor.
- Simmer for 10 minutes, stirring occasionally.
- Now add the fish steaks, scooping some of the sauce on top.
- They should be ready in 10 minutes, but test with the point of a
knife they are ready as soon as the flesh is no longer translucent.
Serve 4
Any fish with firm white flesh will be suitable for this recipe. Serve
with warm rice and salad.
