Fish Steaks with Soy Sauce and Ginger Recipes

Ingredients :

500g fish steaks, such as cod, halibut, monkfish or hake

1/2 tsp salt

2 tbsp sherry

4 tbsp cornflour

1 egg white, lightly beaten

3 tbsp sunflower oil

1 slice fresh root ginger, finely chopped

2 tbsp light soy sauce

2 tsp sugar

125ml Thai fish stock

spring onion, to garnish

Method :
  1. Cut the fish steaks into pieces about 5 x 4cm and place them in a shallow dish.
  2. Mix together the salt, sherry and 1 tbsp of the cornflour, pour over the fish and marinate for 30 minutes.
  3. Dip the fish pieces in egg white, then in the remaining cornflour.
  4. Heat the oil in a preheated wok, add the fish pieces and fry until golden, stir them gently to separate each piece.
  5. Add the ginger, soy sauce, sugar and stock.
  6. Cook for 3-4 minutes, until the liquid has completely evaporated.
  7. Ready to serve, garnished with spring onion.
