Griddled Cod Steaks with Mint Pesto Recipes

Ingredients :

4 x 175g cod steaks

1 lime, cut into wedges, to garnish

steamed green vegetables, to serve

Mint Pesto:

6 tbsp chopped mint

1 tbsp chopped parsley

1 garlic clove, crushed and chopped

1 tbsp freshly grated Parmesan cheese

1 tbsp double cream

1 tsp balsamic vinegar

3 tbsp extra virgin olive oil

sea salt and pepper

Method :
  1. Heat a griddle pan or nonstick frying pan.
  2. Put on the cod steaks and cook for 4 minutes on each side, until slightly charred and firm to the touch.
  3. Place the pesto ingredients in a food processor and process until smooth.
  4. Serve the cod steaks with a spoonful of pesto and with seasonal steamed green vegetables.
  5. Garnish with lime wedges.

Serves 4
