Grilled Salmon Steaks with Herb Butter Recipes

Ingredients : |
125g butter
2 tbsp finely chopped mixed herbs such as
parsley, dill, chervil, chives or fennel
squeeze of lemon juice
50g butter, melted
4 x 175g salmon steaks
salt and pepper
To garnish:
4 lemon wedges
watercress sprigs
To serve:
boiled new potatoes
steamed vegetables or green salad |
Method :
- Mix the butter, herbs and lemon
juice in a bowl.
- Lay the butter on a piece of
greaseproof paper and roll into a log shape about 2.5cm in diameter,
refrigerate until solid.
- Brush a baking sheet with melted
butter and lay the salmon steaks on top.
- Brush with half of the remaining
butter and season well with salt and pepper.
- Cook under a preheated medium
grill for 4-5 minutes on each side.
- On turning each steak, brush with
more melted butter and season again.
- Alternatively, the steaks can be
cooked on a cast-iron griddle pan.
- Cut the log of herb butter into 4
rounds.
- Transfer the cooked steaks
carefully on to warmed plates and top each with a round of butter.
- Garnish with lemon wedges and
sprigs of watercress and serve with boiled new potatoes, steamed
vegetables or a green salad.
