Poached Salmon with Herb Sauce Recipes

Ingredients : |
4 salmon fillets
1.5 cups fresh flat-leaf parsley
2 cloves garlic, crushed
5 anchovy fillets
1 tbsp capers, drained
3 tbsp fresh basil
2 tbsp fresh mint
2 tsp Dijon mustard
1/2 cup olive oil
watercress, to serve |
Method :
- Lay each salmon fillet
skin-side-down on separate sheets of foil.
- Season well, then wrap the fillet
tightly in the foil, making an airtight seal.
- Place the wrapped fillets in a
large saucepan and cover medium heat, bring to a simmer and cook the
fish for 2 minutes.
- Remove the fish and leave to cool
slightly.
- To make the sauce, place the
parsley, garlic, anchovies, capers, basil, mint, mustard and 2 tbsp
of the oil in a food processor.
- Pulse for 20 seconds, scrape down
the side of the bowl and process again while adding the rest of the
oil in a thin stream.
- Open each parcel and remove the
skin from the salmon fillet.
- Serve at room temperature with the
herb sauce and watercress.
