Spicy Courgette Fritters with Smoked Salmon Recipes

Ingredients : |
500g courgettes, grated
1 egg, beaten
2 tbsp plain flour
1 chili, deseeded and chopped
1 garlic clove, crushed
75g cheddar cheese, grated
sea salt and pepper
dill sprigs, to garnish
To serve:
250g smoked salmon, thinly sliced
125g cream cheese |
Method :

Heat a griddle pan or nonstick
frying pan. Squeeze the excess moisture out of the grated courgettes
- the best way to do this is to place all the courgettes in a clean
tea towel and squeeze well.

Mix together the egg and flour
until smooth, add all the other ingredients, mix well and season to
taste with salt and pepper.

Spoon mounds of the mixture on to
the griddle, flatten with a palette knife and cook the fritters for
4-5 minutes.

Then turn and cook for a further
4-5 minutes.

Do not disturb them while they are
cooking as a crust needs to form on the cooking side, otherwise they
will be difficult to turn.

Keep the cooked fritters warm and
repeat until all the mixture has been used.

Serve the fritters between layers
of smoked salmon and cream cheese, garnished with sprigs of dill.
