Tuna with Spiced Onion Relish Recipes

Ingredients :

4 x 175g tuna steaks

chili powder, to taste

1 tbsp ground coriander

2 tbsp ground cumin

2 tbsp grated fresh root ginger

4 tbsp olive oil

1kg large onions, sliced

4 garlic cloves, crushed

100ml Fish stock

salt and cayenne pepper

Method :
  1. Season the tuna sparingly with chili powder, cover, cool for 60 minutes.
  2. Heat a frying pan, add coriander, cumin, ginger and season with salt and cayenne pepper, dry over low heat for 30 seconds.
  3. Add the oil to the pan, heat for 30 seconds, add onions, garlic, cover and cook for 45 minutes until the onions are golden and very soft.
  4. Add the stock to the pan and put the fish on the onions, bring to simmering point and cook gently until the fish flakes when tested with a fork.
  5. Transfer the fish to a warmed serving dish with a slotted spoon.
  6. Boil the mixture in the pan until most of the liquid has evaporated, then add to the fish on the dish and serve.
