Tuna with Spiced Onion Relish Recipes

Ingredients : |
4 x 175g tuna steaks
chili powder, to taste
1 tbsp ground coriander
2 tbsp ground cumin
2 tbsp grated fresh root ginger
4 tbsp olive oil
1kg large onions, sliced
4 garlic cloves, crushed
100ml Fish stock
salt and cayenne pepper |
Method :
- Season the tuna sparingly with
chili powder, cover, cool for 60 minutes.
- Heat a frying pan, add coriander,
cumin, ginger and season with salt and cayenne pepper, dry over low
heat for 30 seconds.
- Add the oil to the pan, heat for
30 seconds, add onions, garlic, cover and cook for 45 minutes until
the onions are golden and very soft.
- Add the stock to the pan and put
the fish on the onions, bring to simmering point and cook gently
until the fish flakes when tested with a fork.
- Transfer the fish to a warmed
serving dish with a slotted spoon.
- Boil the mixture in the pan until
most of the liquid has evaporated, then add to the fish on the dish
and serve.
