Saffron Chicken Recipes

Ingredients :

800 g chicken boneless, cut into 8 pieces

100 ml oil

2 bay leaves

6 cloves (laung)

6 green cardamoms (choti elaichi)

160 g onion paste

30 g ginger paste

30 g garlic paste

6 g coriander powder

75 g cashew nut paste

225 g yoghurt, whisked

salt to taste

white pepper powder

a pinch saffron (kesar)

150 ml cream

Method :
  1. Heat oil in a heavy bottomed pan.
  2. Add bay leaf, cloves and cardamom and sauté until the cardamom changes color.
  3. Add onion paste, ginger and garlic pastes and stir fry till the oil separates.
  4. Add coriander powder and cashew nut paste, stir fry for 2 minutes.
  5. Add chicken pieces and cook for 3 minutes.
  6. Mix in yoghurt, add salt, white pepper and saffron.
  7. Bring to boil, reduce heat, simmer until chicken becomes tender.
  8. Garnish with chopped coriander and slit green chilies (optional).
  9. Serve hot with any Indian bread.

Serves 4 - 6
