Tamarind Flavored Chicken Recipes

Ingredients :

1.2 kg chicken

2.5 g red chili powder

5 g turmeric (haldi) powder

salt to taste

30 g garlic paste

45 g ginger paste

80 ml groundnut oil

25 g tamarind (imlee)

12 curry leaves

120 g tomatoes, chopped

85 g onions, chopped

2.5 g green cardamom (choti elaichi) powder

1.25 g clove (laung) powder

2.5 g coriander powder

1.25 g cinnamon (daalchini) powder

2.5 g black peppercorns, pounded

20 g green coriander, chopped

15 ml lemon juice

Method :
  1. Clean the chicken, debone and cut into 1.5" cubes.
  2. Mix red chilies, turmeric and salt with half of the ginger and garlic pastes.
  3. Rub this marinade into the chicken pieces.
  4. Keep aside for 30 minutes.
  5. Heat oil in a kadhai (wok), add the marinated chicken and sauté over medium heat until light brown from all sides.
  6. Remove chicken and reserve the oil.
  7. Soak tamarind in a cup of water.
  8. After 10 minutes, mash well, squeeze out the pulp and discard.
  9. Keep extract aside.
  10. Reheat the reserved oil, add curry leaves and stir over medium heat for 30 seconds.
  11. Add onions and sauté until light brown.
  12. Add the remaining ginger adn garlic pastes, stir for a minute, add tomatoes and stir.
  13. Cook till the fat appears on the sides of the pan.
  14. Add cardamom, coriander, clove and cinnamon powders and stir for a minute.
  15. Add the tamarind and cook for 5 minutes.
  16. Add chicken pieces and simmer for 8-10 minutes.
  17. Add water (1 cup) and bring to boil.
  18. Reduce heat to medium and cook, stirring constantly until the moisture has evaporated and the chicken pieces are coated evenly.
  19. Sprinkle pepper and lemon juice.
  20. Remove to a flat dish, garnish with green coriander and onion rings.
  21. Serve hot.
