Bean and Lamb Casserole Cooking Recipes

ground
cinnamon

of lamb |
Method :
- Soak beans overnight.
- Cut the flesh from the lamb in thin strips, 5 cm
wide and 12 cm long.
- Mix together the parsley, garlic, tomato purée
and spices.
- Rub the meat with the spice mixture, and marinate
for 4 hours or overnight.
- Roll up the lamb strips and place them in a
casserole.
- Strain the beans, place in a pan of cold water
and bring to the boil.
- Boil rapidly for 10 minutes, then strain and put
them on top of the meat.
- Cover with water, put the lid on and cook in a
preheated oven (120C/250F/Gas 1/2) for 5 hours.
