Bean and Lamb Casserole Cooking Recipes

Ingredients :

haricot, beans

parsley, chopped

garlic cloves, crushed

tomato purée

ground mace

ground cinnamon

ground cloves

pepper

a shoulder of lamb

Method :
  1. Soak beans overnight.
  2. Cut the flesh from the lamb in thin strips, 5 cm wide and 12 cm long.
  3. Mix together the parsley, garlic, tomato purée and spices.
  4. Rub the meat with the spice mixture, and marinate for 4 hours or overnight.
  5. Roll up the lamb strips and place them in a casserole.
  6. Strain the beans, place in a pan of cold water and bring to the boil.
  7. Boil rapidly for 10 minutes, then strain and put them on top of the meat.
  8. Cover with water, put the lid on and cook in a preheated oven (120C/250F/Gas 1/2) for 5 hours.
