Beef With Orange Herbal Mustard Recipes

Ingredients :

3 tbsp oil

1 1/2 lb braising steak, cubed

2 cups chopped onion

1 clove garlic, peeled and crushed

2 tbsp flour

1 1/4 cups beef stock

2 oranges, plus 1 more for garnish and herbal mustard

1 tbsp tomato paste

3 tbsp Grand Marnier

1 tbsp maple syrup

salt and pepper

1 cup sliced mushrooms

Herbal Mustard

2 tbsp mixed fresh herbs, finely chopped, such as thyme and chives

juice and grated rind of half an orange

3 tbsp Dijon mustard

Method :
  1. Heat the oil and fry the beef to seal it.
  2. Transfer to a casserole.
  3. Fry the onion and garlic, drain and add to the casserole.
  4. Add the flour to the pan and cook for 1 minute, then add the stock and bring to a boil.
  5. Finely sliced off the colored part of the rind of two oranges and chop into small pieces.
  6. Squeeze both oranges, and add the juice and the rind to the casserole.
  7. Add the tomato paste, Grand Marnier and maple syrup, and season to taste.
  8. Preheat the oven to 350F.
  9. Cover the casserole and cook in the oven for at least 1 1/2 hours.
  10. Add the mushrooms and return to the oven for another 30 minutes.
  11. Serve garnished with slices from half the remaining orange and the herbal mustard described below (remember to grate the orange before cutting it up).
  12. To make the herbal mustard, grate the orange rind and mix with the chopped fresh herbs.
  13. Then mix in the orange juice and the Dijon mustard.
  14. Serve with the beef in a separate dish.
