Lamb Kofta Recipes

Ingredients : |
750g lamb mince
2 tsp cumin
1 tsp garam masala
2 cloves garlic, finely chopped
2 tsp ground coriander
3 tbsp chopped fresh coriander leaves
2 tbsp chopped fresh parsley
1 egg
2 tbsp corn flour
1/4 cup seasoned plain flour
oil, for shallow-frying
plain yoghurt, to serve (optional) |
Method :
- Place the lamb, spices, herbs,
egg, corn flour, 1/2 tsp salt and 1/2 tsp black pepper in a food
processor and process quickly until blended.
- Roll 16 heaped tbsp of the mixture
into oval shapes, toss in the seasoned flour, then place on a tray,
cover and refrigerate for 30 minutes.
- Dust the whole ovals again with
the remaining flour.
- Heat the oil in a frying pan and
cook the kofta over medium heat for 4-6 minutes each side, or until
lightly browned.
- Drain on paper towels and serve
warm with yoghurt.
Serves 4
The kofta
taste great with hummus and tabbouleh, which are available ready-made at
supermarkets.
