Mincemeat Recipes

Ingredients :

250 g raisins

250 g currants

125 g mixed peel

2 cooking apples, cored, peeled and chopped

1 tsp finely grated lemon rind

1 tsp finely grated orange rind

125 g brown sugar

125 g butter, melted

1/2 tsp ground nutmeg

1/2 tsp ground cinnamon

1/4 tsp ground cloves

170 ml brandy

Method :
  1. Finely chop raisins, currants and mixed peel and place in a large bowl.
  2. Add apples, lemon rind, orange rind, sugar, butter, nutmeg, cinnamon, cloves and brandy to bowl and mix well to combine.
  3. Cover with plastic food wrap and set aside in a cool place to mature for 3 days.
  4. Stir twice a day.
  5. Spoon fruit mixture into sterilized jars and cover.
  6. Store in the refrigerator for 2 weeks before using.

Makes 6 cups
