Pork Crumble Recipes

Ingredients :

Filling

15ml oil

450g minced pork

1 onion, sliced

25g plain flour

150ml milk

150ml vegetable stock

50g broccoli florets

50g drained canned sweet corn

1 green eating apple, cored and diced

salt and freshly ground black pepper

Topping

50g instant oatmeal

50g plain flour

15g butter

25g freshly grated Red Leicester cheese

Method :
  1. Preheat the oven to 350F, Gas 4.
  2. For the filling, heat the oil in a large pan and fry the pork for 5 minutes.
  3. Add the onion and continue to fry for a further 3 minutes.
  4. Stir in the flour and cook for 1 minute.
  5. Pour in the milk and stock and bring to the boil, stirring all the time.
  6. Add the broccoli, sweet corn and apple, with salt and pepper to taste.
  7. Spoon the mixture into flour individual ovenproof dishes.
  8. For the crumble topping, mix together the oatmeal and flour, then rub in the butter.
  9. Spoon the topping onto the pork mixture and press down with the back of a spoon.
  10. Scatter over the cheese and place in the pre-heated oven.
  11. Cook for 45 minutes.
  12. Garnish with slices of apple and serve at once.

Variation - For a rich cheesy topping, mix together crushed potato crisps and grated cheese. Cook as before.

Minced pork combines with the sweetness of apple and the texture of crunchy vegetables. Trapped under an oaty topping, this is a meal to tempt all the family.
