Pork and Mushrooms With Sage and Mango Chutney Recipes

Ingredients :

scant 2 tbsp butter

1 tbsp sunflower oil

1 1/2 lb cubed pork

6 oz onion, peeled and chopped

2 tbsp flour

1 7/8 cups stock

4 tbsp white wine

salt and pepper

8 oz mushrooms, sliced

6 fresh sage leaves, finely chopped

2 tbsp mango chutney

1 fresh mango, peeled and sliced to garnish

Method :
  1. Heat the butter and oil and fry the pork in a pan to seal it.
  2. Transfer to a casserole.
  3. Fry the onion in the pan, stir in the flour and cook for 1 minute.
  4. Preheat the oven to 350F.
  5. Gradually add the stock and white wine to the onion and bring to a boil.
  6. Season well with salt and pepper, then add the mushrooms, sage leaves and mango chutney.
  7. Pour the sauce mixture over the pork and cover the casserole.
  8. Cook in the oven for about 1 hour, depending on the cut of pork, until tender.
  9. Check the seasoning, garnish with mango slices, and serve with rice.

The mango chutney and sage leaves add a special flavor to this traditional dish.
