Pork and Mushrooms With Sage and Mango Chutney Recipes

tbsp butter
1 tbsp
sunflower oil
1 1/2 lb
cubed pork
6 oz
onion, peeled and chopped
2 tbsp
flour
1 7/8 cups
stock
4 tbsp
white wine
salt and
pepper
8 oz
mushrooms, sliced
6 fresh
sage leaves, finely chopped
2 tbsp
mango chutney
1 fresh
mango, peeled and sliced to garnish |
Method :
- Heat the butter and oil and fry
the pork in a pan to seal it.
- Transfer to a casserole.
- Fry the onion in the pan, stir in
the flour and cook for 1 minute.
- Preheat the oven to 350F.
- Gradually add the stock and white
wine to the onion and bring to a boil.
- Season well with salt and pepper,
then add the mushrooms, sage leaves and mango chutney.
- Pour the sauce mixture over the
pork and cover the casserole.
- Cook in the oven for about 1 hour,
depending on the cut of pork, until tender.
- Check the seasoning, garnish with
mango slices, and serve with rice.
The mango chutney and sage leaves add a
special flavor to this traditional dish.
