Method :
Remove all
fat and membrane from steak. Put steak in a large glass, pottery or
enamel baking dish. Sprinkle with garlic. Pour wine over. Cover and let
marinate several hours, turning often. Heat broiler. Lift steak out of
marinade (save marinade), drain well and brush off garlic. Put on rack
in broiler pan and put under hot broiler. Broil 4 minutes on first side.
Sprinkle with salt and pepper and turn. Broil 4 minutes on second side.
Sprinkle with salt and pepper. Put on board or platter. Pour pan juices
into small saucepan. Add saved marinade and heat to boiling. Cut meat in
thin slices on the diagonal across the grain. Spoon some of pan
juices-wine mixture over each serving.
