Cranberry and Port Sauce With Lemon Thyme Recipes

Ingredients :

4 tbsp port

4 tbsp orange juice

1/2 cup sugar

8 oz fresh cranberries, picked over

1 tbsp finely grated orange rind

1 tbsp very finely chopped lemon thyme

Method :
  1. Pour the port and orange juice into a saucepan and add the sugar.
  2. Place the pan over a low heat and stir frequently with a metal spoon to dissolve the sugar.
  3. Transfer the mixture to a larger pan.
  4. Increase the heat a little and add the cranberries.
  5. Bring to mixture to the boil and simmer for 5 minutes, stirring occasionally, until the cranberries are just tender and the skins begin to burst.
  6. Remove the pan from the heat and carefully mix in the orange rind and lemon thyme.
  7. Leave the sauce to cool, then pour into sterilized glass jars and seal with waxed paper circles and cellophane lids secured with rubber bands.
  8. Add a label and decorate with short lengths of string tied around the top if you like.

Makes about 2 1/2 cups
