Pickled Cabbage Recipes

Ingredients :

1 kg Chinese cabbage, coarsely chopped

1 tbsp salt

2 spring onions, chopped

2 cloves garlic, crushed

1 tbsp chili paste (sambal oelek)

2 tsp grated fresh ginger

125 ml light soy sauce

125 ml white vinegar

1/2 tsp sesame oil

Method :
  1. Place cabbage in a large bowl, sprinkle with salt and set aside for 4 hours.
  2. Press cabbage to remove excess liquid and drain.
  3. Add spring onions, garlic, chili paste (sambal oelek), ginger, soy sauce and vinegar and stir to combine.
  4. Pack cabbage mixture into a large warm sterilized jar and seal.
  5. Label and leave in a cool place for at least 1 week before using to allow flavor to develop.
  6. Just prior to serving, sprinkle with sesame oil.

Makes 1 x 1 liter
