Pickled Cabbage Recipes

Ingredients : |
1 kg Chinese cabbage, coarsely chopped
1 tbsp salt
2 spring onions, chopped
2 cloves garlic, crushed
1 tbsp chili paste (sambal oelek)
2 tsp grated fresh ginger
125 ml light soy sauce
125 ml white vinegar
1/2 tsp sesame oil |
Method :
- Place cabbage in a large bowl,
sprinkle with salt and set aside for 4 hours.
- Press cabbage to remove excess
liquid and drain.
- Add spring onions, garlic, chili
paste (sambal oelek), ginger, soy sauce and vinegar and stir to
combine.
- Pack cabbage mixture into a large
warm sterilized jar and seal.
- Label and leave in a cool place
for at least 1 week before using to allow flavor to develop.
- Just prior to serving, sprinkle
with sesame oil.
Makes 1 x 1 liter
