Sirloin Steaks With Bloody Mary Sauce and Coriander Recipes

Ingredients :

4 sirloin steaks, 8 oz each

Marinade :

2 tbsp soy sauce

4 tbsp balsamic vinegar

2 tbsp olive oil

Sauce :

2 lb very ripe tomatoes, peeled and chopped

tomato paste, if required

1/2 cup chopped onions

2 spring onions

1 tsp chopped fresh coriander

1 tsp ground cumin

1 tsp salt

1 tbsp fresh lime juice

1/2 cup beef consommé, fresh or canned

1/4 cup vodka

1 tbsp Worcester sauce

Method :
  1. Lay the steaks in a shallot dish, mix the marinade ingredients together in a bowl, pour over the steaks and leave for at least a couple of hours in the refrigerator, turning once or twice.
  2. If the tomatoes are not quite ripe, add a little tomato paste.
  3. Place all the sauce ingredients in a food processor and blend to a fairly smooth texture.
  4. Put in a pan, bring to a boil and simmer for about 5 minutes.
  5. Remove the steaks from the marinade and place under a hot broiler.
  6. Discard the marinade.
  7. Broil the steaks under a high heat until cooked.
  8. Serve with the sauce.

Serves 4

This cocktail of ingredients is just as successful as the well known drink, but the alcohol evaporates in cooking, so you need not worry about a hangover.
