Venison Steaks With Elderberry and Orange Recipes

Ingredients :

4 venison tenderloin steaks, 6-8 oz each

olive oil for basting

black pepper

salt

2 tbsp red wine

4 tbsp orange juice, plus slices of orange to garnish

2 tbsp elderberry jelly

sprigs of parsley, to garnish

Method :
  1. Pound the venison steaks a little with a meat mallet to make the meat more tender.
  2. Preheat the broiler.
  3. Brush with olive oil and season with freshly ground black pepper.
  4. Broil under a high heat until done to your taste.
  5. Sprinkle with a little salt.
  6. In a pan, reduce the red wine, then add the orange juice and elderberry jelly and simmer for 10 minutes.
  7. Pour over the steaks and garnish with slices of oranges and parsley sprigs.

Serves 4

Farmed venison is now widely available. The strong flavor of the meat is well matched by the sweet sauce.
