2 tbsp light sesame oil
1 small red onion, diced
1 cup sliced shiitake mushrooms
1/2 tsp sea salt
1/4 cup freshly grated ginger
2 tbsp tamari
2 tbsp honey
1/4 cup sake
1 tbsp arrowroot
1 cup shredded carrot
1/2 cup sesame seeds
1 pound medium shrimp, peeled, washed, and
deveined

Method :
Heat oil in
medium skillet. Sautee onion, mushrooms, and salt until mushrooms are
limp. Add ginger, tamari, honey, sake, and arrowroot to mushroom mixture
and cook until mixture begins to thicken. Stir in shredded carrot,
sesame seeds, and shrimp. Sauté until shrimp is opaque (about 5
minutes). Serve hot.
Bright
carrots and a splash of sake add color and flavor to this savory medley
of spicy ginger, pungent shiitakes and tender shrimp. Serve with brown
rice and braised greens with a splash of rice vinegar for a tasty,
oriental style meal.
