Lentil Soup Cooking Recipes

lentils

onions, chopped

bacon rashers, chopped

carrots, chopped

oil

stock

salt

pepper

ground coriander

ground cumin

chopped mint leaves

Method :
  1. Wash the lentils thoroughly and soak in water for several hours.
  2. Fry the onion and bacon in the oil until the onions is translucent.
  3. Add the drained lentils and carrot for a minute, stirring, then pour over the stock.
  4. Season with salt and pepper, coriander and cumin.
  5. Bring to the boil and simmer gently until the lentils are cooked.
  6. Garnish with mint leaves before serving.

Serves 6 - 8
